Bellini Recipe
White peach puree
Prosecco (or other white sparkling wine)
-- Fill 1/3 of a champagne flute with puree
-- Top to brim with chilled Prosecco
-- Enjoy!
While some Bellini recipes we’ve seen rely on liqueurs or cordials
to achieve that perfect peach flavor, purists say the true Bellini cocktail is a simple two-to-one blend of Italian sparkling white wine with white peach
puree served in a fluted glass.
That’s the way they served them up in 1948 at Harry's Bar in
Venice, when head
bartender Giuseppe Cipriani blended Italian white peaches – in season only from
June to September – with Prosecco and declared the gentle blush color to be the
exact shade of the toga of a saint in a painting by 15th-century Venetian
artist Giovanni Bellini.
